Reader Recipe: Superfood Granola

I cannot get enough granola these days. Without my realizing it, it has become my breakfast of choice as the weather has gotten warmer (I ate oatmeal all winter), so I've decided to declare this summer the "Summer of Granola," aka SoG2k14 ;) 

Since I'm not much of a cook, I've been buying granola at the grocery store (Bear Naked--it's pretty healthy for a store-bought brand), and adding my own extra ingredients each morning, such as shredded coconut, walnuts, chia seeds, and fresh berries. But, I know that's lame and doesn't make for a good 'recipe' blog post...

So, I was thrilled when one of the best cooks that I know, my brother's girlfriend, Jocelyn, sent me the recipe for her homemade Superfood Granola. I mean, look at it (above)! Doesn't it look incredible? 

And here's the best part: you can get more of Jocelyn's amazing recipes + fabulous pics of her meal inspirations on her Instagram feed, Clean Creations. Even if you're a non-cook like me, I promise her photos will still make you happy, as her presentation is always gorgeous and her comfort foods made of healthy ingredients (Protein Pop Tarts, Gluten-Free Pizza, Protein Donuts, etc.) will make you drool.

But for now, lets talk Superfood Granola. Here's her recipe:

Ingredients:
  • 3 cups rolled organic oats
  • 3/4 cup pine nuts
  • 3/4 cup shredded coconut
  • 1/4 cup maple syrup
  • 1/4 cup olive oil
  • 2 tablespoons molasses
  • 1/8 teaspoon salt
  • 1 cup dried berries
  • 1 cup pumpkin seeds

Instructions:
  1. Preheat oven to 250 degrees. 
  2. Mix maple syrup, olive oil, molasses, and salt in large bowl. 
  3. Add oats, pine nuts, and coconut. 
  4. Combine until evenly coated and pour onto 2 sheet pans lined with aluminum foil. 
  5. Cook for 1 hour and 15 minutes, stirring every 20 minutes. 
  6. Remove from oven and pour into large bowl. 
  7. Add pumpkin seeds and dried berries.
  8. Enjoy as a snack on-the-go, or with milk, yogurt, or fruit!

How easy and fabulous does that sound?  
I'm sure you could also throw in more of your favorite nuts, fruits, seeds, etc., if you wanted mucho goodies.
